  • 1/2 cup fresh herbs (mint, parsley, dill, and/or basil): optional, for herbal freshness
  • 4 tsp red wine vinegar: base for the vinaigrette
  • 1/4 cup extra virgin olive oil: emulsifies the dressing
  • 1/2 tsp garlic powder or 1 small garlic clove (grated): adds savory depth
  • 1/2 tsp dried oregano: brings classic Mediterranean flavor
  • 1/2 tsp kosher salt: enhances flavor

Instructions

  1. Finely chop romaine, cucumber, tomatoes, bell pepper, red onion or scallions, olives, and fresh herbs. Place all in a large mixing bowl.
  2. Dice the cooked chicken breast and crumble the feta cheese, then add them to the bowl.
  3. In a small bowl, whisk together red wine vinegar, olive oil, garlic powder or fresh garlic, dried oregano, salt, and pepper until fully emulsified.
  4. Pour the dressing over the salad mixture and toss well to coat all ingredients evenly.
  5. Taste and adjust seasoning with more salt or pepper if needed.
