- 1 cup confectioners’ sugar (for glaze)

- 2 teaspoons eggnog (for glaze)
- 1/8 teaspoon ground nutmeg (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf or muffin pan with non-stick spray containing flour.
- In a large bowl, whisk together eggs, eggnog, spiced rum, sugar, vanilla extract, and melted butter. Mix until just combined.
- In a separate bowl, sift flour, vanilla pudding mix, baking powder, salt, and ground nutmeg.
- Gradually add the dry ingredients into the wet ingredients. Mix gently until just incorporated. The batter will be thick and slightly lumpy.
- Pour batter into prepared pan. Bake for 30 minutes if using mini loaf pans or 45–55 minutes for a standard loaf. Check doneness with a toothpick.
- While baking, whisk together confectioners’ sugar, eggnog, spiced rum, and nutmeg until smooth to make the glaze.
- Once bread is fully baked and cooled, drizzle glaze over the top. Allow glaze to set before slicing and serving.
