  • 1/2 teaspoon ground nutmeg
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup confectioners’ sugar (for glaze)
  • 2 tablespoons spiced rum (for glaze)
  • 2 teaspoons eggnog (for glaze)
  • 1/8 teaspoon ground nutmeg (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf or muffin pan with non-stick spray containing flour.
  2. In a large bowl, whisk together eggs, eggnog, spiced rum, sugar, vanilla extract, and melted butter. Mix until just combined.
  3. In a separate bowl, sift flour, vanilla pudding mix, baking powder, salt, and ground nutmeg.
  4. Gradually add the dry ingredients into the wet ingredients. Mix gently until just incorporated. The batter will be thick and slightly lumpy.
  5. Pour batter into prepared pan. Bake for 30 minutes if using mini loaf pans or 45–55 minutes for a standard loaf. Check doneness with a toothpick.
  6. While baking, whisk together confectioners’ sugar, eggnog, spiced rum, and nutmeg until smooth to make the glaze.
  7. Once bread is fully baked and cooled, drizzle glaze over the top. Allow glaze to set before slicing and serving.
