Description

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a stand mixer, cream together butter, sugar, and baking powder on medium speed for 3–4 minutes until light and fluffy.
  3. Scrape down the bowl, then add the egg and vanilla extract. Mix until combined.
  4. Gradually mix in the flour on low speed until just combined. Avoid overmixing.
  5. Roll the dough into 1-inch balls and place them on a baking sheet about 1 inch apart.
  6. Use your thumb or a small spoon to make an indentation in the center of each ball.
  7. Fill each indentation with about 1/2 teaspoon of jam.
  8. Bake for 20 minutes, rotating the pan halfway through, until edges are lightly golden.
  9. Let the cookies cool on the pan for 2–3 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chill dough balls for 30 minutes before baking if your kitchen is warm to prevent spreading.
