  • 1 sleeve saltine crackers (about 40 crackers)
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon (divided)
  • 1 1/2 cups white chocolate chips
  • 1/4 cup granulated sugar


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and arrange the saltine crackers in a single layer, edge to edge.
  2. In a medium saucepan, melt the butter and brown sugar over medium heat, stirring constantly until smooth and bubbling.
  3. Remove from heat and stir in vanilla extract and 1 teaspoon of ground cinnamon.
  4. Pour the hot caramel mixture over the crackers and spread evenly with a spatula.
  5. Bake for 5–7 minutes, until the caramel is bubbling and slightly darkened.
  6. Remove from oven and sprinkle white chocolate chips over the hot caramel. Let sit for 1–2 minutes, then spread evenly.
  7. In a small bowl, mix granulated sugar with the remaining 1 teaspoon of cinnamon, then dust over the melted white chocolate.
  8. Let cool completely at room temperature or refrigerate for faster setting. Break into pieces and serve.
