- 1 cup unsalted butter, softened
- 1½ cups sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture and mix well.
- Roll the dough into small balls and place them 2 inches apart on the baking sheets.
- Flatten the balls slightly with the bottom of a glass.
- Bake for 8-10 minutes or until lightly golden. Don’t overbake to keep them soft.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks.
Notes
For a variation, you can add chocolate chips, nuts, or raisins to the dough. If you prefer crispier cookies, simply bake them a few minutes longer. Remember, the key to perfect cinnamon cookies is not to overbake them. Enjoy your baking adventure!
