Ingredients

  • 1 cup unsalted butter, softened
  • 1½ cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture and mix well.
  6. Roll the dough into small balls and place them 2 inches apart on the baking sheets.
  7. Flatten the balls slightly with the bottom of a glass.
  8. Bake for 8-10 minutes or until lightly golden. Don’t overbake to keep them soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks.

Notes
