These Cinnamon Roll No Bake Cookies are quick, easy, and full of warm cinnamon flavor. Made with instant cinnamon roll oatmeal, white chocolate chips, and pantry staples, they’re the perfect no-bake treat for cozy cravings or holiday cookie trays.

Instructions
- Lay a Silpat mat or long sheet of foil on your countertop for dropping cookies later.
- In a medium saucepan over medium-high heat, combine butter, granulated sugar, brown sugar, and almond milk. Stir occasionally until the mixture comes to a boil.
- Once boiling, set a timer for 1 minute and stir constantly to avoid burning.
- Remove the pot from heat and stir in vanilla extract, ground cinnamon, nutmeg, salt, and white chocolate chips until fully melted and smooth.
- Add 2 1/2 cups of the cinnamon roll oatmeal and stir. Add more if needed until the mixture is thick and semi-firm (not dry or runny).
- Use a medium cookie scoop to drop cookie portions onto the prepared Silpat or foil. Cookies will begin to set quickly, so work fast.
- Allow the cookies to cool and set completely at room temperature before storing or serving.
Notes
- Store cookies in an airtight container at room temperature for up to 5 days.
- Freeze in a single layer for up to 2 months; thaw at room temperature before eating.
- Use maple & brown sugar oatmeal with added cinnamon if cinnamon roll flavor is unavailable.
- Do not over-boil the sugar mixture—boiling longer than 1 minute may result in dry cookies.
