Instructions
- Prepare Cinnamon Filling first: In a medium bowl, mix the melted butter, brown sugar, and cinnamon. Scoop the filling into a small zip baggie and set aside for 10-15 minutes.
- In another bowl, whisk together the flour, baking powder, and salt. Stir in the milk, vegetable oil, and egg until just combined. (Some lumps are fine.)
- Prepare the Cream Cheese Glaze: In a microwave-safe bowl, melt the butter and cream cheese. Stir until smooth, then whisk in powdered sugar and vanilla extract.
- Heat a large skillet over low heat and spray with non-stick cooking spray. Pour about ½ cup of pancake batter onto the skillet.
- Snip a small corner of the cinnamon filling bag and squeeze a spiral of the filling over the pancake batter.
- When bubbles begin to appear on the pancake surface, flip the pancake and cook until lightly browned on the other side, about 1 to 2 minutes.
- Transfer the cooked pancakes to a baking sheet and keep warm in the oven while you make the remaining pancakes.
- Once ready to serve, spoon the warmed cream cheese glaze over the pancakes. Enjoy!
