Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Cover the dough and refrigerate for 30 minutes.
- In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until a smooth, spreadable paste forms.
- On a lightly floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick. Spread the cinnamon filling evenly over the dough, leaving a small border around the edges.
- Starting with one of the long edges, tightly roll up the dough into a log. Wrap the log in plastic wrap and refrigerate for an additional 30 minutes to firm up.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Once the dough is chilled, slice it into 1/4-inch thick rounds and place them on the prepared baking sheet about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cookies.
- Allow the glaze to set before serving. Store cookies in an airtight container at room temperature for up to 3 days.
