- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
- In a large bowl, combine the mashed bananas, melted butter, granulated sugar, beaten egg, and vanilla extract. Mix until well blended.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- In a small bowl, mix the ground cinnamon and brown sugar to make the cinnamon swirl.
- Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture on top.
- Pour the remaining batter over the swirl and top with the remaining cinnamon mixture.
- Use a knife or skewer to gently swirl the cinnamon mixture through the batter.
- Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil if browning too quickly.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas for best flavor and sweetness.
- Don’t overmix the batter to avoid a dense texture.
- To freeze, wrap tightly in plastic wrap and foil; thaw before serving.
