Description

This classic bruschetta recipe is an easy Italian appetizer featuring toasted garlic bread topped with fresh tomatoes, basil, and a drizzle of balsamic glaze. Perfect for parties, summer gatherings, or a quick snack, this simple and healthy dish takes just 30 minutes to prepare!

Ingredients

Scale

For the Tomato Topping:

  • 6 Roma tomatoes, diced
  • ⅓ cup fresh basil leaves, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

For the Bruschetta Toasts:

  • 1 baguette, sliced into ½-inch thick pieces
  • 3 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • ⅓ cup shredded parmesan cheese (optional)
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Prepare the Tomato Topping: Dice the tomatoes and place them in a bowl. Roll basil leaves into a tight bundle and slice them into thin ribbons before adding them to the tomatoes. Stir in the minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Let the mixture marinate for 15–30 minutes to enhance the flavors.
  2. Preheat the Oven: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper. Slice the baguette diagonally into ½-inch thick pieces and arrange them in a single layer on the baking sheet.
  3. Prepare the Bruschetta Toasts: In a small bowl, mix the olive oil with minced garlic. Brush this mixture evenly over both sides of the bread slices. If using parmesan, sprinkle a thin layer on top before baking.
  4. Toast the Bread: Bake the bread for 5 minutes, then switch to broil mode and toast for 1–2 minutes until golden and crisp. Watch closely to prevent burning.
  5. Assemble and Serve: Transfer the warm toasts to a serving platter. Serve the tomato mixture in a separate bowl, allowing guests to top their own bruschetta. For extra flavor, drizzle with balsamic glaze before serving.

Notes

  • For extra crunch: Toast the bread on a grill instead of baking.
  • Make it a meal: Add diced mozzarella or avocado for a heartier version.
  • Leftovers: The tomato mixture can be stored in the fridge for up to 2 days, but the bread is best served fresh.
