Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon instant coffee granules
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter, brown sugar, and granulated sugar together in a large bowl until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in the instant coffee granules and vanilla extract until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the semisweet chocolate chips evenly throughout the dough.
  8. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 10–12 minutes until the edges are golden and the centers are still soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
