Description

Cottage Cheese Bagels are easy, high-protein homemade bagels made with just a few simple ingredients and no yeast. Soft and fluffy inside with a golden crust, these bagels require no boiling and are perfect for breakfast, meal prep, or a healthy snack.

  • 1 cup + 1 tablespoon (135g) all-purpose flour
  • 1 1/2 teaspoons (6g) baking powder
  • 1 cup (225g) 2% cottage cheese
  • 1 large egg (for egg wash)
  • 1 tablespoon everything bagel seasoning (optional topping)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together 1 cup + 1 tablespoon all-purpose flour and 1 1/2 teaspoons baking powder until evenly combined.
  3. Add 1 cup cottage cheese and mix with a spatula, then knead with your hands about 15–20 times until a soft dough forms. If sticky, add 1 tablespoon flour at a time as needed.
  4. Cover the bowl with a towel and let the dough rest for 10 minutes.
  5. Transfer dough to a lightly floured surface, shape into a log, and divide into 4 equal pieces.
  6. Roll each piece into a rope about 6–7 inches long and pinch the ends together to form a bagel shape.
  7. Place bagels on the prepared baking sheet.
  8. Whisk the egg and brush it evenly over the tops of the bagels. Sprinkle with 1 tablespoon everything bagel seasoning if desired.
  9. Bake for 25 minutes or until golden brown and firm to the touch.
  10. Remove from oven and let rest for 10–15 minutes before slicing and serving.

Notes

  • Do not drain or blend the cottage cheese; the moisture helps create a soft texture.
  • If dough is too sticky, add small amounts of flour gradually until manageable.
  • For gluten-free version, use a 1:1 gluten-free baking flour blend.
  • Self-rising flour can be used; omit the baking powder if using it.
  • Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
