  • ½ cup full-fat cottage cheese, drained and blended until smooth
  • 1 tablespoon cornstarch
  • ¼ teaspoon cream of tartar
  • 1 tablespoon powdered sweetener (optional)
  • ½ teaspoon vanilla extract (optional)
  • ½ teaspoon lemon zest (optional)
  • ½ cup fresh blueberries

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Drain and blend the cottage cheese until smooth to remove any lumps.
  3. In a clean, dry bowl, beat the egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, whisk together the egg yolks, blended cottage cheese, cornstarch, sweetener (optional), vanilla extract, and lemon zest (optional) until smooth.
  5. Gently fold the egg yolk mixture into the whipped egg whites, being careful not to deflate the air in the whites.
  6. Fold in the blueberries gently to distribute them evenly.
  7. Use a ¼ cup measuring cup to scoop the batter onto the prepared baking sheet, spacing the mounds about 2 inches apart. Slightly flatten each mound with a spoon.
  8. Bake for 25-30 minutes, or until the tops are golden brown and firm.
  9. Allow the bread to cool on a wire rack before serving. Enjoy warm or store for later.
