Instructions
- Preheat your oven to 325°F (163°C) and grease a 12-cup muffin tin generously with cooking spray.
- In a large bowl, whisk the eggs until the yolks and whites are fully combined.
- Fold in the cottage cheese, bacon bits, shredded Colby Jack cheese, salt, and black pepper. Mix until evenly combined.
- Pour the egg mixture into the prepared muffin tin, filling each cup about ¾ full.
- Place a pan of water on the lower rack of the oven to help keep the egg bites moist during baking.
- Place the muffin tin on the top rack of the oven and bake for 23-25 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Let the egg bites cool for 2-3 minutes before removing them from the muffin tin.
