Description

Cottage Cheese Egg Bites are soft, moist, and protein-packed breakfast bites made with eggs, cottage cheese, crispy bacon, and melty cheese. These bite-sized treats are easy to prepare, taking less than 30 minutes, and are perfect for a grab-and-go breakfast or a quick snack.


Ingredients

  • 7 large eggs
  • 1 cup cottage cheese (small curd recommended)
  • ¾ cup bacon bits (or cooked bacon, chopped)
  • 1 cup shredded Colby Jack cheese
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Cooking spray for greasing the muffin tin


Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 12-cup muffin tin generously with cooking spray.
  2. In a large bowl, whisk the eggs until the yolks and whites are fully combined.
  3. Fold in the cottage cheese, bacon bits, shredded Colby Jack cheese, salt, and black pepper. Mix until evenly combined.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about ¾ full.
  5. Place a pan of water on the lower rack of the oven to help keep the egg bites moist during baking.
  6. Place the muffin tin on the top rack of the oven and bake for 23-25 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the egg bites cool for 2-3 minutes before removing them from the muffin tin.
