- 2 cups chicken broth
- 1 cup half-and-half
- ⅓ cup butter
- 1 cup chopped onion
- 1 cup peeled and chopped carrots
- 1 cup chopped celery
- ½ cup flour
- 1 teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 cups cooked, diced or shredded chicken
- ½ cup frozen peas (not thawed)
- 2 cups Bisquick mix
- ⅔-¾ cup cold buttermilk
- ½ cup grated sharp cheddar cheese
- ¼ teaspoon dried parsley
- 2 tablespoons butter, melted
- ⅛ teaspoon garlic powder
Instructions
- Preheat oven to 425°F. Spray a 2 ½ – 3-quart casserole dish with cooking spray and set aside.
- In a bowl, whisk together chicken broth and half-and-half, then set aside.
- In a large skillet, melt butter over medium-high heat. Add onion, carrot, and celery. Sauté for 10 minutes.
- Add flour to the skillet and cook, stirring for an additional minute.
- Gradually stir in the chicken broth mixture. Reduce heat to medium, and cook, stirring regularly until thick and bubbly, about 5-6 minutes.
- Stir in the salt, pepper, chicken, and frozen peas.
- Transfer the filling to the prepared baking dish. Cover with foil and bake for 10 minutes while preparing the biscuit dough.
- In a separate bowl, combine Bisquick, buttermilk, cheddar cheese, and parsley. Stir with a fork until the dough forms.
- Remove the casserole from the oven, uncover it, and stir the filling.
- Use a scoop to drop biscuit dough (about ¼ cup each) on top of the chicken mixture.
- Return to the oven and bake uncovered for 12 minutes, or until the biscuits are golden brown. If the biscuits brown too quickly, cover with foil and continue baking.
- Once done, brush the biscuits with melted butter mixed with garlic powder and serve hot.
Notes
- To make ahead, prepare the filling and refrigerate for up to 3 days. Bake the casserole when ready to serve.
- If the biscuits are too dark before fully cooking through, tent the casserole with foil and continue baking.
- For a thicker filling, reduce the casserole dish size or cook the mixture a little longer to evaporate excess moisture.
