Description

Country Chicken and Biscuits is a comforting and hearty casserole dish that combines a creamy chicken filling with golden, cheesy biscuits on top. It’s perfect for a cozy family dinner or a special occasion.


Ingredients

  • 2 cups chicken broth
  • 1 cup half-and-half
  • ⅓ cup butter
  • 1 cup chopped onion
  • 1 cup peeled and chopped carrots
  • 1 cup chopped celery
  • ½ cup flour
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 cups cooked, diced or shredded chicken
  • ½ cup frozen peas (not thawed)
  • 2 cups Bisquick mix
  • -¾ cup cold buttermilk
  • ½ cup grated sharp cheddar cheese
  • ¼ teaspoon dried parsley
  • 2 tablespoons butter, melted
  • ⅛ teaspoon garlic powder


Instructions

  1. Preheat oven to 425°F. Spray a 2 ½ – 3-quart casserole dish with cooking spray and set aside.
  2. In a bowl, whisk together chicken broth and half-and-half, then set aside.
  3. In a large skillet, melt butter over medium-high heat. Add onion, carrot, and celery. Sauté for 10 minutes.
  4. Add flour to the skillet and cook, stirring for an additional minute.
  5. Gradually stir in the chicken broth mixture. Reduce heat to medium, and cook, stirring regularly until thick and bubbly, about 5-6 minutes.
  6. Stir in the salt, pepper, chicken, and frozen peas.
  7. Transfer the filling to the prepared baking dish. Cover with foil and bake for 10 minutes while preparing the biscuit dough.
  8. In a separate bowl, combine Bisquick, buttermilk, cheddar cheese, and parsley. Stir with a fork until the dough forms.
  9. Remove the casserole from the oven, uncover it, and stir the filling.
  10. Use a scoop to drop biscuit dough (about ¼ cup each) on top of the chicken mixture.
  11. Return to the oven and bake uncovered for 12 minutes, or until the biscuits are golden brown. If the biscuits brown too quickly, cover with foil and continue baking.
  12. Once done, brush the biscuits with melted butter mixed with garlic powder and serve hot.

Notes

  • To make ahead, prepare the filling and refrigerate for up to 3 days. Bake the casserole when ready to serve.
  • If the biscuits are too dark before fully cooking through, tent the casserole with foil and continue baking.
  • For a thicker filling, reduce the casserole dish size or cook the mixture a little longer to evaporate excess moisture.
