Description

Cowboy Casserole is a hearty and delicious comfort food dish, perfect for busy weeknights or family gatherings. This easy-to-make casserole combines ground beef, corn, creamy soup, and crispy tater tots, creating a dish that’s both satisfying and full of flavor.

  • 1/2 pound ground beef (85/15)
  • 1 cup corn
  • 2/3 cup Condensed Cream of Mushroom Soup
  • 1 cup cheddar cheese, shredded and divided
  • 1/3 cup whole milk
  • 1/4 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • ½ cup bacon, cooked and crumbled
  • 32 ounces tater tots


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  3. Stir in the corn, cream of mushroom soup, ½ cup of shredded cheddar cheese, milk, sour cream, onion powder, black pepper, and crumbled bacon. Mix well.
  4. Transfer the beef mixture into a 9×13-inch baking dish. Layer the tater tots evenly on top of the mixture.
  5. Bake in the preheated oven for 40-45 minutes, or until tater tots are golden brown and crispy.
  6. Sprinkle the remaining cheddar cheese on top and bake for an additional 5 minutes until cheese is melted and bubbly.
  7. Let cool for a few minutes before serving.
