  • 1 lb (450 g) penne pasta
  • 2 cups (about 300 g) cooked shredded chicken
  • 8 oz (225 g) cream cheese, softened
  • 1 oz (1 packet) ranch seasoning mix
  • 1 cup (120 g) shredded cheddar cheese, divided
  • 1/2 cup (75 g) cooked bacon, crumbled
  • 1/2 cup (120 g) sour cream
  • 1 cup (240 ml) chicken broth
  • 1/4 cup (25 g) chopped green onions (optional)


Instructions

  1. Bring a large pot of salted water to a boil and cook the 1 lb penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, combine 8 oz cream cheese, 1 packet ranch seasoning mix, and 1 cup chicken broth. Stir until the cream cheese is fully melted and the sauce is smooth.
  3. Add 2 cups shredded chicken to the skillet and mix well to coat in the creamy sauce.
  4. Stir in 1/2 cup sour cream and 1/2 cup of the shredded cheddar cheese. Cook until the cheese melts and the sauce thickens.
  5. Add the drained penne pasta to the skillet and toss until evenly coated with the sauce.
  6. Sprinkle the remaining 1/2 cup cheddar cheese and 1/2 cup crumbled bacon over the top.
  7. Cover and cook on low heat for 5–7 minutes, or until the cheese is melted and bubbly.
  8. Garnish with 1/4 cup chopped green onions if desired, and serve warm.

Notes

  • Use rotisserie chicken for quicker preparation and extra flavor.
  • Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
  • If the sauce becomes too thick, add 2–3 tablespoons of warm chicken broth or milk to loosen it.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a baked version, transfer to a baking dish and bake at 375°F (190°C) for 10–15 minutes until golden and bubbly.
