- 1 lb (450 g) penne pasta
- 2 cups (about 300 g) cooked shredded chicken
- 8 oz (225 g) cream cheese, softened
- 1 oz (1 packet) ranch seasoning mix
- 1 cup (120 g) shredded cheddar cheese, divided
- 1/2 cup (75 g) cooked bacon, crumbled
- 1/2 cup (120 g) sour cream
- 1 cup (240 ml) chicken broth
- 1/4 cup (25 g) chopped green onions (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the 1 lb penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, combine 8 oz cream cheese, 1 packet ranch seasoning mix, and 1 cup chicken broth. Stir until the cream cheese is fully melted and the sauce is smooth.
- Add 2 cups shredded chicken to the skillet and mix well to coat in the creamy sauce.
- Stir in 1/2 cup sour cream and 1/2 cup of the shredded cheddar cheese. Cook until the cheese melts and the sauce thickens.
- Add the drained penne pasta to the skillet and toss until evenly coated with the sauce.
- Sprinkle the remaining 1/2 cup cheddar cheese and 1/2 cup crumbled bacon over the top.
- Cover and cook on low heat for 5–7 minutes, or until the cheese is melted and bubbly.
- Garnish with 1/4 cup chopped green onions if desired, and serve warm.
Notes
- Use rotisserie chicken for quicker preparation and extra flavor.
- Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
- If the sauce becomes too thick, add 2–3 tablespoons of warm chicken broth or milk to loosen it.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a baked version, transfer to a baking dish and bake at 375°F (190°C) for 10–15 minutes until golden and bubbly.
