- 1-2 Tbsp jalapeno pepper, seeds removed, finely diced
- 2 spring onions, finely sliced
- 1/2 cup mayo
- 1/2 cup sour cream
- 3/4 cup buttermilk
- 1-1/2 Tbsp dry ranch dressing mix
- 1/4 cup fresh parsley, chopped
- 1 Tbsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Cook the ditalini pasta according to the package instructions for al dente texture, then drain and set aside to cool.
- While the pasta cools, cook the bacon. Cut it into strips before cooking for even pieces. Once crispy, drain on paper towels to remove excess fat and let it cool.
- Dice the jalapeno pepper finely, removing the seeds for less heat, and slice the spring onions.
- In a large bowl, combine the cooled pasta, corn, bacon, shredded cheddar, diced jalapenos, and sliced spring onions.
- In a separate bowl, whisk together the mayo, sour cream, buttermilk, ranch dressing mix, chopped parsley, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss gently until everything is evenly coated.
- Refrigerate for at least an hour to allow the flavors to meld, then serve garnished with extra parsley if desired.
