Description

  • 1/4 teaspoon salt
  • 1/2 cup (60g) dried cranberries, finely chopped
  • 1 tablespoon lime zest
  • 1 cup (120g) powdered sugar, sifted (for coating)
  • 1 teaspoon lime zest (for coating)


Instructions

  1. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  2. Mix in the vanilla extract and 1 tablespoon of lime zest until well combined.
  3. Gradually add the flour and salt, mixing until just incorporated.
  4. Fold in the chopped dried cranberries.
  5. Cover and refrigerate the dough for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll the chilled dough into 1-inch balls and place them 1 inch apart on the prepared sheet.
  8. Bake for 12–14 minutes, or until the bottoms are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  9. In a small bowl, combine 1 cup powdered sugar and 1 teaspoon lime zest for the coating.
  10. While the cookies are still slightly warm, gently roll them in the coating mixture until fully covered.
  11. Once the cookies have cooled completely, re-roll them in the sugar mixture for a festive finish.
