Crazy Crust Pie

Crazy Crust Pie

Crazy Crust Pie is an easy, versatile dessert where the crust magically forms around the fruit filling as it bakes. It requires minimal effort and delivers a sweet, golden pie that’s perfect for any occasion. Whether you use apple, cherry, or blueberry filling, this pie will surely satisfy your sweet tooth!

  • Total Time: 45-50 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 cup of flour
  • 1/4 cup of sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/2 cup of butter or margarine (softened)
  • 3/4 cup of milk
  • 1 egg
  • 1 (21 oz.) can of fruit pie filling (apple, cherry, peach, blueberry, blackberry, etc.)
  • Sugar (or cinnamon-sugar) for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie plate generously so the pie doesn’t stick.
  2. Mix the batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the softened butter, milk, and egg, then beat the mixture until it’s smooth. You want the batter to be well-blended but not overmixed.
  3. Pour the batter into the greased pie plate. Spread it evenly to the edges, but don’t worry about making it perfect—this is a “crazy” crust after all!
  4. Add the filling: Now, the fun part! Grab your can of fruit pie filling and carefully spoon it into the center of the batter. Make sure you leave about an inch of space from the edges. As the pie bakes, the crust will rise and wrap around the fruit filling—no rolling pins required.
  5. Sprinkle with sugar: If you’re using apple or peach filling, go ahead and sprinkle some cinnamon-sugar on top for extra flavor. For other fruit fillings, just a bit of sugar will do.
  6. Bake: Pop the pie into the preheated oven and bake for 35 to 40 minutes. You’ll know it’s done when the crust is golden brown and cooked through.
  7. Cool and serve: Let the pie cool for a few minutes before slicing. Trust me, it’ll be hard to wait, but it’s worth it!

Notes

  • Mix it up: Don’t feel limited to one type of filling! Crazy Crust Pie works beautifully with apple, cherry, peach, blueberry, or even blackberry. Whatever fruit you have on hand, toss it in!
  • Make it your own: Sprinkle some chopped nuts or oats on top for a little extra crunch, or swap out the cinnamon-sugar for brown sugar if you want a caramelized flavor.
  • No pie filling? No problem! Fresh or frozen fruit works just as well. Simply simmer it with a bit of sugar and cornstarch until it thickens up like a pie filling. Then proceed as usual.
  • Don’t stir! Resist the temptation to mix the batter and filling once you pour the fruit in. The magic happens when they bake together without interference.
