Cream Cheese Corn Casserole

Cream Cheese Corn Casserole

This Cream Cheese Corn Casserole is a rich, creamy, and cheesy side dish with a crunchy Ritz cracker topping. Perfect for family dinners, potlucks, and holiday gatherings, it’s easy to make and incredibly delicious.

  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 2 cans (15.25 oz each) whole kernel corn, drained
  • 1 can (15.25 oz) creamed corn
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 sleeve (about 40) Ritz crackers, crushed
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven: First things first—preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Mix the ingredients: In a large mixing bowl, combine the drained whole kernel corn, creamed corn, softened cream cheese, melted butter, sour cream, shredded cheddar cheese, shredded mozzarella cheese, chopped green onions, garlic powder, salt, and pepper. Stir until everything is well-mixed and creamy.
  3. Prepare the topping: In a separate small bowl, mix together the crushed Ritz crackers and grated Parmesan cheese. This crunchy topping adds the perfect amount of texture to your casserole.
  4. Assemble the casserole: Spread the corn mixture evenly into the greased baking dish, and then sprinkle the Ritz cracker and Parmesan mixture on top.
  5. Bake: Pop the casserole into the preheated oven and bake for 30-35 minutes. You’ll know it’s done when the casserole is bubbly and the top is golden brown.
  6. Cool and serve: Once baked, allow the casserole to cool slightly before serving. It’s the perfect balance of creamy and crunchy, and it’ll definitely be the star of the table!

Notes

  • Make it ahead: One of the best things about Cream Cheese Corn Casserole is that it can be made in advance. Assemble the casserole the night before and store it in the fridge. When you’re ready to bake, simply pop it in the oven and you’re good to go!
  • Add-ins: Want to add a little extra something? You can throw in some cooked bacon bits, diced jalapeños for a kick, or even swap out the Ritz crackers for crushed Corn Flakes or panko breadcrumbs for an extra crispy topping.
  • Storing leftovers: Got leftovers? Lucky you! Store them in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave until heated through.
  • Freezing tip: This casserole freezes well, too. Just make sure to wrap it tightly with aluminum foil and store it for up to 2 months. When ready to eat, thaw it overnight in the fridge and bake.
