Description

Cream Cheese Pistachio Cookies are soft, creamy, and nutty cookies made with real cream cheese, pistachio pudding mix, and chopped pistachios. With a chewy texture and an optional chocolate dip, they make a festive and flavorful treat for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 3/4 cup white sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (3.4 oz) package pistachio pudding mix (instant or regular)
  • 1/2 cup chopped pistachios
  • Optional: 1/2 cup bittersweet chocolate chips (for dipping)


Instructions

  1. Preheat the oven to 350°F (175°C). Line cookie sheets with parchment paper.
  2. Cream together butter, cream cheese, and sugar until light and fluffy.
  3. Add the egg and vanilla extract. Beat until fully incorporated.
  4. Gradually add flour, baking powder, salt, and pistachio pudding mix. Mix until just combined.
  5. Stir in chopped pistachios. The dough will be thick and slightly sticky.
  6. Use a medium cookie scoop to form dough balls. Place on baking sheets, spacing about 2 inches apart.
  7. Bake for 15 minutes, or until edges are lightly golden.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Optional: Melt chocolate chips in the microwave, stirring every 30 seconds until smooth. Dip cooled cookies halfway and place on parchment to set.
  10. Store in an airtight container or freeze for later use.

  • Chill the dough for 20–30 minutes if it’s too sticky to handle.
  • Do not overbake—cookies should be soft in the center.
