- 1 cup (2 sticks) butter, softened
- 8 oz cream cheese, softened
- 3/4 cup white sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 (3.4 oz) package pistachio pudding mix (instant or regular)
- 1/2 cup chopped pistachios
- Optional: 1/2 cup bittersweet chocolate chips (for dipping)
Instructions
- Preheat the oven to 350°F (175°C). Line cookie sheets with parchment paper.
- Cream together butter, cream cheese, and sugar until light and fluffy.
- Add the egg and vanilla extract. Beat until fully incorporated.
- Gradually add flour, baking powder, salt, and pistachio pudding mix. Mix until just combined.
- Stir in chopped pistachios. The dough will be thick and slightly sticky.
- Use a medium cookie scoop to form dough balls. Place on baking sheets, spacing about 2 inches apart.
- Bake for 15 minutes, or until edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Optional: Melt chocolate chips in the microwave, stirring every 30 seconds until smooth. Dip cooled cookies halfway and place on parchment to set.
- Store in an airtight container or freeze for later use.
Notes
- Use room temperature butter and cream cheese for best mixing results.
- Chill the dough for 20–30 minutes if it’s too sticky to handle.
- Do not overbake—cookies should be soft in the center.
- Cookies can be frozen for up to 3 months.
