Description

Creamy Boursin Chicken is a delicious, rich, and easy-to-make dish that combines tender chicken breasts with a creamy Boursin cheese sauce. It’s quick to prepare, making it the perfect option for a weeknight meal or a special dinner. The creamy, herbed Boursin cheese adds a flavorful depth that makes this dish stand out.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 cup diced onion
  • 1 cup chicken stock
  • 1 package (5.2 oz) Boursin Garlic & Herb Cheese
  • 1/2 cup fresh spinach (optional)

Instructions

  1. Slice each chicken breast in half horizontally to create thinner pieces.
  2. Season the chicken with the flour, garlic powder, onion powder, salt, and pepper mixture, making sure to coat both sides evenly.
  3. Heat olive oil in a large pan over medium-high heat. Add the chicken and sear for 3-4 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the pan and set aside. In the same pan, sauté the diced onion for 2-3 minutes until soft and fragrant.
  5. Pour the chicken stock into the pan and stir in the Boursin cheese. Let it simmer for 3-4 minutes until the sauce thickens.
  6. Return the chicken to the pan, adding spinach if using, and simmer for an additional 30 seconds to combine and heat through.
  7. Serve the chicken with the creamy Boursin sauce and enjoy!

Notes

  • Ensure the chicken is cooked through by checking its internal temperature (165°F).
  • If the sauce becomes too thick, add additional chicken stock to reach your desired consistency.
  • This dish can be served with rice, mashed potatoes, or a side salad.
  • Feel free to substitute chicken thighs for a juicier option.
