  • 1 tablespoon olive oil
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup butternut squash puree
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme (chopped)
  • Salt (to taste)
  • Freshly ground coarse black pepper (to taste)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced Italian sausage and cook for about 4-5 minutes until browned on one side. Flip the sausage and cook for another 2 minutes.
  3. To the skillet with sausage, add the uncooked potato gnocchi, heavy cream, and chicken broth. Stir and bring to a boil.
  4. Cover the skillet and cook for about 5 minutes on medium heat, allowing the gnocchi to cook in the sauce.
  5. Add butternut squash puree and minced garlic to the skillet. Stir to combine and cook for 3-4 more minutes, ensuring the gnocchi is fully cooked and the sauce thickens.
  6. Stir in fresh sage and thyme. Season with salt and freshly ground black pepper to taste.
  7. Remove from heat and serve hot, garnished with extra sage and thyme.
