  • 1 red bell pepper, seeded and diced

  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon paprika powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup parmesan cheese, freshly shredded
  • 1 cup heavy cream or half-and-half
  • 4 oz cream cheese, at room temperature
  • 1/4 cup chicken broth

Instructions

  1. Boil a large pot of salted water and cook the pasta until al dente. Drain, rinse under cold water, and set aside.
  2. In a large skillet, heat the butter and olive oil over medium heat. Add the diced onion and cook until translucent, about 3–4 minutes.
  3. Add the bell pepper and minced garlic. Stir in Cajun seasoning, dried basil, paprika, black pepper, salt, and cayenne. Cook for another 3 minutes.
  4. Add the diced chicken to the skillet and cook for 6–8 minutes, stirring occasionally, until the chicken is cooked through.
  5. Stir in the cream cheese, parmesan, heavy cream, and chicken broth. Simmer for 8–10 minutes until the sauce thickens and becomes smooth.
  6. Add the cooked pasta to the sauce and toss until fully coated. Cook for an additional 2–3 minutes to let the flavors meld. Serve hot.

  • Let cream cheese come to room temperature for easier melting.
