  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro (plus more for topping)
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 cup coconut milk (preferably full-fat)
  • 2/3 cup chicken broth
  • 1 tbsp brown sugar (or coconut sugar)
  • 2 limes
  • 1 green onion, chopped (for garnish)
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat coconut oil and olive oil in a large, oven-safe skillet over medium heat.
  3. Combine flour and cilantro in a bowl. Dip each chicken breast into the mixture and place it in the skillet.
  4. Pan-sear the chicken for 3-4 minutes on each side until golden brown.
  5. Add minced garlic to the skillet and sauté for 30 seconds.
  6. Whisk together coconut milk, chicken broth, brown sugar, and lime juice in a separate bowl.
  7. Remove the skillet from heat, then pour the coconut milk mixture over the chicken.
  8. Place the skillet in the oven and bake for 10-15 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Drizzle the remaining lime juice over the chicken and garnish with cilantro, green onions, salt, and pepper.
