- 1 pound large raw shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning or Old Bay
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning or oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons butter
- 4–5 garlic cloves, minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ cup reserved pasta water
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then reserve ½ cup of pasta water before draining.
- Season the Shrimp: While the pasta is cooking, combine the shrimp with olive oil, Cajun seasoning, garlic powder, Italian seasoning, salt, and pepper. Mix well to coat evenly.
- Sauté the Shrimp: In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the seasoned shrimp and cook for about 1 minute per side, or until pink and slightly charred. Remove the shrimp from the skillet and set aside.
- Sauté the Garlic: Add the remaining tablespoon of butter to the skillet, then stir in the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn it.
- Make the Cream Sauce: Pour the heavy cream into the skillet and stir in the Parmesan cheese. Gradually add some of the reserved pasta water to loosen the sauce to your desired consistency. Stir until the cheese is fully melted and the sauce is smooth.
- Combine Everything: Add the drained pasta to the skillet and toss well to coat in the sauce. Return the shrimp to the skillet and gently mix everything together until evenly combined and warmed through.
- Serve and Enjoy: Garnish with extra Parmesan, a sprinkle of red pepper flakes, or fresh chopped parsley for a pop of color and flavor. Serve immediately.
Notes
- You can add fresh spinach or sun-dried tomatoes to the sauce for extra texture and color.
To make this gluten-free, use a gluten-free pasta of your choice.
Leftovers should be stored in an airtight container and can be reheated in the microwave with a splash of broth or water to prevent drying.
