Instructions

  1. Brown the sausage: In a large pot over medium heat, cook the Italian sausage, breaking it into crumbles as it browns. Once fully cooked, use a slotted spoon to remove the sausage and set it aside.
  2. Sauté the aromatics: In the same pot, add olive oil and sauté the diced onion until soft and translucent, about five minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the liquids and seasonings: Pour in the chicken broth and bring it to a gentle boil. Reduce the heat to a simmer and stir in the heavy cream, oregano, basil, red pepper flakes, salt, and pepper.
  4. Cook the pasta: Add the ditalini pasta and let it simmer, stirring occasionally, until it becomes al dente, about eight minutes.
  5. Combine the sausage and spinach: Return the cooked sausage to the pot and stir in the chopped spinach, allowing it to wilt for about two minutes.
  6. Finish with Parmesan: Remove the pot from heat and stir in the grated Parmesan cheese until fully melted and blended into the broth.
  7. Serve and garnish: Ladle the soup into bowls and top with extra Parmesan cheese and fresh parsley for garnish.
