Description

Creamy Parmesan Italian Sausage Soup is a rich, hearty, and comforting one-pot meal made with Italian sausage, ditalini pasta, and a luscious parmesan-infused cream broth. Perfect for cozy dinners or meal prep.


Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 quarts chicken broth
  • 1 cup ditalini pasta
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and break it up as it browns. Cook until fully browned, then remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until translucent.
  3. Add dried oregano and basil. Stir to release their flavors.
  4. Add diced tomatoes and chicken broth. Bring to a boil.
  5. Return sausage to the pot and simmer for 10 minutes.
  6. Add ditalini pasta and cook until al dente, about 8-10 minutes.
  7. Lower heat and stir in heavy cream and Parmesan cheese gradually, until fully melted and creamy.
  8. Season with salt and pepper to taste. Garnish with fresh parsley and serve hot.
