Ingredients

Instructions

  1. In a large pot, combine diced potatoes and chopped onion. Add chicken broth and bring to a simmer. Cook until the potatoes are fork-tender, about 15 minutes.
  2. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes until golden. Slowly add milk while whisking constantly until thickened and smooth.
  3. Pour the milk mixture into the pot with the potatoes. Stir well and let it simmer for 5–10 minutes. Season with salt and pepper to taste.
  4. Ladle the soup into bowls and garnish with shredded cheddar cheese, crispy bacon bits, and chopped green onions. Serve hot.
