- 12 oz potato gnocchi
- 1 cup pumpkin puree
- 1 tablespoon olive oil
- 12 oz spicy Italian sausage (casings removed)
- 1 cup heavy cream
- ⅓ cup chicken broth
- 3 cloves garlic, minced
- 4 oz fresh spinach
- 2 tablespoons fresh sage, chopped
- 2 tablespoons fresh thyme, chopped
- Salt, to taste
- Coarsely ground black pepper, to taste
Instructions
- Heat olive oil in a large, high-sided skillet over medium heat. Add the sausage and cook until browned, about 5-6 minutes.
- Add the uncooked gnocchi, heavy cream, and chicken broth to the skillet. Bring to a boil, then cover and cook for 5 minutes, stirring occasionally.
- Stir in pumpkin puree and minced garlic. Combine well.
- Add the fresh spinach and cook for another 3-5 minutes, until the spinach wilts and the gnocchi are tender.
- Add fresh thyme and sage, and season with salt and pepper. Stir well and let cook for another 1-2 minutes to incorporate flavors.
- Remove from heat and serve hot, garnished with additional fresh herbs if desired.
