Description

Creamy Pumpkin Gnocchi is a comforting, autumn-inspired dish with soft potato gnocchi, a creamy pumpkin sauce, savory sausage, and fresh spinach. Perfect for a quick and cozy dinner, this one-pan recipe brings the flavors of fall to your table in just 30 minutes.


Ingredients

  • 12 oz potato gnocchi
  • 1 cup pumpkin puree
  • 1 tablespoon olive oil
  • 12 oz spicy Italian sausage (casings removed)
  • 1 cup heavy cream
  • ⅓ cup chicken broth
  • 3 cloves garlic, minced
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt, to taste
  • Coarsely ground black pepper, to taste


Instructions

  1. Heat olive oil in a large, high-sided skillet over medium heat. Add the sausage and cook until browned, about 5-6 minutes.
  2. Add the uncooked gnocchi, heavy cream, and chicken broth to the skillet. Bring to a boil, then cover and cook for 5 minutes, stirring occasionally.
  3. Stir in pumpkin puree and minced garlic. Combine well.
  4. Add the fresh spinach and cook for another 3-5 minutes, until the spinach wilts and the gnocchi are tender.
  5. Add fresh thyme and sage, and season with salt and pepper. Stir well and let cook for another 1-2 minutes to incorporate flavors.
  6. Remove from heat and serve hot, garnished with additional fresh herbs if desired.

Notes

  • For a lighter version, substitute the heavy cream with half-and-half or coconut milk for a dairy-free alternative.
  • If you prefer a thicker sauce, cook the gnocchi longer to allow the sauce to reduce.
  • For a gluten-free version, use gluten-free gnocchi available in stores.
  • Feel free to use mild Italian sausage instead of spicy if you prefer less heat.
