Instructions

  1. Prepare the Chicken: Slice each chicken breast into two or three thinner pieces, aiming for about ½ inch thick. Lightly pound the chicken if needed to ensure even cooking. Sprinkle both sides with Italian seasoning, salt, and pepper.
  2. Sear the Chicken: Heat a large skillet over medium-high heat and add olive oil. Brush one side of each chicken piece with melted butter, then place butter-side down in the pan. Sear for about 4 to 5 minutes per side until golden brown. Remove the chicken from the skillet and set it aside.
  3. Make the Sauce: In the same skillet, lower the heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir well to combine, allowing the sauce to gently bubble for about 5 minutes.
  4. Simmer the Chicken: Return the seared chicken to the skillet, spooning the sauce over each piece. Partially cover the pan and let the chicken simmer for another 10 minutes, allowing it to soak up the flavors and heat through completely.
