Description
Crinkly Grinch Cookies are a fun and festive holiday treat with a minty flavor and soft, cakey texture. These cookies are perfect for Christmas, featuring a vibrant green color and a sprinkle of red hearts for a festive touch.  - 1 Tablespoon baking powder
 - ½ teaspoon salt
 - 1 ½ cups granulated sugar
 - ⅓ cup unsalted butter, softened
 - 2 large eggs, room temperature
 - 1 Tablespoon pure vanilla extract
 - 1 teaspoon mint extract (optional)
 - Green gel food coloring paste (about 4 drops, adjust to desired color)
 - Heart-shaped sprinkles (for decoration)
 - Granulated sugar or powdered sugar (for rolling, optional)
 
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
 - In a separate large bowl, use a stand mixer or hand mixer to beat together the sugar and softened butter until light and fluffy, about 2-3 minutes.
 - Add the eggs, vanilla extract, and mint extract (if using), mixing until fully combined.
 - Gradually add half of the dry ingredients into the wet mixture, mixing on low speed. Then, add the remaining dry ingredients and mix until fully combined. The dough will be crumbly for the first few minutes but will come together.
 - Add 4 drops of green gel food coloring paste and continue mixing until the color is fully integrated. Adjust the color as needed.
 - Using a medium cookie scoop (1 ½ tablespoons), scoop the dough and roll each scoop into a ball using your hands. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
 - Optional: Roll the dough balls in granulated sugar or powdered sugar for added sweetness and decoration.
 - Bake at 375°F for 8 minutes, or until the cookies begin to crinkle. They will continue to set as they cool.
 - Remove the cookies from the oven and gently press a heart-shaped sprinkle into the center of each cookie while they are still warm.
 - Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
 
Notes
- If you prefer a thicker crinkle, chill the dough for 30 minutes before rolling and baking.
 - You can substitute mint extract with peppermint extract if you prefer a stronger mint flavor, but start with ½ teaspoon and adjust to taste.
 - The cookies will continue to crinkle and set as they cool, so don’t worry if they seem soft when first removed from the oven.
 - Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
