Ingredients
Scale
- 2 zucchinis (sliced into 1/4-1/2″ rounds)
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning
- 1/4 cup panko breadcrumbs
- 1/3 cup grated parmesan cheese
Instructions
- Preheat oven to 425°F (220°C).
- Slice the zucchinis into 1/4 to 1/2 inch thick rounds.
- In a medium bowl, combine olive oil, salt, pepper, Italian seasoning, panko breadcrumbs, and parmesan cheese. Stir to fully combine.
- Add the zucchini slices to the bowl and toss to coat them evenly with the breadcrumb mixture. Add more olive oil if needed.
- Place the zucchini slices on a large baking sheet, ensuring they are in a single layer.
- Bake for 4-5 minutes, then switch the oven setting to broil. Broil for 3-4 minutes or until the breadcrumbs are golden and the cheese is melted.
- Remove from the oven and serve immediately.
Notes
- Slice zucchini no thicker than 1/2 inch for optimal crispiness.
- For extra crispiness, use panko breadcrumbs rather than regular breadcrumbs.
- Serve immediately to maintain the crispy texture.
- If you prefer a spicier flavor, add red pepper flakes or cayenne pepper to the breadcrumb mixture.
- For a gluten-free version, use gluten-free breadcrumbs and ensure the parmesan is free of additives.
