Description

Crispy Crunchy Chickpeas are a flavorful, healthy, and satisfying snack that stays crispy for days. Roasted at the perfect temperature with simple spices, they make for an addictive treat or a great salad topper.


Ingredients

  • 1 15-ounce can chickpeas
  • 1 tablespoon olive oil
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ⅛ teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 375°F (190°C), or 400°F (200°C) for extra crispiness.
  2. Rinse and strain the chickpeas. Spread them on paper towels and blot to remove excess moisture.
  3. In a large mixing bowl, toss chickpeas with olive oil, cumin, smoked paprika, salt, pepper, and cayenne until evenly coated.
  4. Spread chickpeas on a baking sheet in a single layer.
  5. Roast for 30 minutes. Toss them once and continue roasting for another 25-30 minutes until golden brown and crispy.
  6. Remove from the oven and let them cool completely before storing in an airtight container.
