Instructions
- Preheat your oven to 375°F (190°C), or 400°F (200°C) for extra crispiness.
- Rinse and strain the chickpeas. Spread them on paper towels and blot to remove excess moisture.
- In a large mixing bowl, toss chickpeas with olive oil, cumin, smoked paprika, salt, pepper, and cayenne until evenly coated.
- Spread chickpeas on a baking sheet in a single layer.
- Roast for 30 minutes. Toss them once and continue roasting for another 25-30 minutes until golden brown and crispy.
- Remove from the oven and let them cool completely before storing in an airtight container.
