Description

  • 1 cup (140 g) sauerkraut, drained and squeezed dry
  • 1 cup (115 g) Swiss cheese, shredded
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 teaspoon (5 g) garlic powder
  • 12 egg roll wrappers
  • 3 cups (720 ml) vegetable or canola oil, for frying
  • 1/2 cup (120 ml) Thousand Island dressing, for dipping


Instructions

  1. In a medium mixing bowl, combine the chopped corned beef, drained sauerkraut, shredded Swiss cheese, Dijon mustard, and garlic powder. Mix thoroughly until evenly combined.
  2. Lay one egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of filling into the center.
  3. Fold the bottom corner over the filling, then fold in both sides tightly. Roll upward to seal, brushing the top corner lightly with water to secure. Repeat with remaining wrappers and filling.
  4. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  5. Carefully place 3–4 egg rolls into the hot oil, avoiding overcrowding. Fry for 3–4 minutes, turning occasionally, until golden brown and crispy.
  6. Remove with a slotted spoon and drain on a paper towel-lined plate.
  7. Serve hot with Thousand Island dressing for dipping.

Notes

  • Thoroughly squeeze excess moisture from the sauerkraut to prevent soggy egg rolls.
  • Do not overfill the wrappers to avoid bursting during frying.
  • For a lighter option, bake at 400°F (200°C) for 15–20 minutes, flipping halfway through.
  • Air fry at 400°F for 10–15 minutes, turning once for even crisping.
  • Freeze uncooked egg rolls in a single layer and fry directly from frozen, adding 1–2 minutes to cook time.
