  • 1 Cup Light Brown Sugar
  • 1 Cup Soy Sauce
  • ⅓ Cup Bourbon Whiskey
  • 2 Tablespoons Apple Cider Vinegar
  • ½ teaspoon Ground Ginger
  • 1 Tablespoon Honey
  • ½ teaspoon Red Pepper Flakes
  • 4 Cloves Garlic (minced)
  • 3 Tablespoons Cornstarch
  • 2 Tablespoons Water
  • ¼ Cup Green Onions (chopped, for garnish)

Instructions

  1. Place the chicken thighs (boneless and skinless) into the bottom of your slow cooker.
  2. In a medium mixing bowl, combine soy sauce, brown sugar, bourbon whiskey, apple cider vinegar, ginger, honey, red pepper flakes, and garlic. Whisk together until smooth.
  3. Pour the sauce over the chicken thighs in the crock pot, ensuring they are well-coated.
  4. Cover and cook on high for 4 hours or low for 6 hours.
  5. After cooking, remove the chicken from the crock pot and roughly chop or shred it into bite-sized pieces.
  6. In a small bowl, mix cornstarch and water to form a slurry. Add it to the sauce in the crock pot and whisk to combine.
  7. Add the chopped chicken back into the crock pot, stirring to coat in the sauce. Let the mixture bubble for a few minutes to thicken the sauce, then turn off the crock pot.
  8. Garnish with chopped green onions and serve over rice.

  • For a non-alcoholic version, substitute the bourbon with apple juice or chicken broth.
