  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp Cajun seasoning
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup diced tomatoes (fresh or canned)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 8 oz penne pasta
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with Cajun seasoning in a bowl and toss until evenly coated.
  2. Transfer the seasoned chicken to the Crock Pot. Add heavy cream, chicken broth, Parmesan cheese, diced tomatoes, bell peppers, and garlic. Stir to combine.
  3. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is fully cooked and tender.
  4. About 15 minutes before the end of cooking, stir in the penne pasta, ensuring it is submerged in the sauce.
  5. Cover and cook for an additional 15–20 minutes, or until the pasta is tender and has absorbed the flavors.
  6. Taste and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley and serve warm.
