Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp Cajun seasoning
- 2 cups heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup diced tomatoes (fresh or canned)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 8 oz penne pasta
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken pieces with Cajun seasoning in a bowl and toss until evenly coated.
- Transfer the seasoned chicken to the Crock Pot. Add heavy cream, chicken broth, Parmesan cheese, diced tomatoes, bell peppers, and garlic. Stir to combine.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is fully cooked and tender.
- About 15 minutes before the end of cooking, stir in the penne pasta, ensuring it is submerged in the sauce.
- Cover and cook for an additional 15–20 minutes, or until the pasta is tender and has absorbed the flavors.
- Taste and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley and serve warm.
Notes
- Start with half the Cajun seasoning if you prefer a milder spice level.
- Substitute heavy cream with half-and-half or coconut milk for a lighter version.
- Add mushrooms, spinach, or zucchini for extra vegetables.
- Use a slow cooker liner to reduce cleanup time.
- Only add pasta near the end to avoid overcooking.
