Description

This Crock Pot Chicken and Stuffing is a comforting slow cooker meal made with seasoned chicken breasts, creamy stuffing mix, and green beans. It’s an easy, all-in-one dinner that delivers classic homestyle flavor with minimal prep.


Ingredients

  • 4 boneless skinless chicken breasts
  • 1.5 tablespoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10.5 oz cream of chicken soup (low sodium)
  • 1 cup (8 oz) sour cream
  • 6 oz box stuffing mix
  • 3/4 cup low sodium chicken broth (use more for extra moisture)
  • 2 cups fresh green beans
  • 1/2 cup diced onions (optional)
  • 1/2 cup diced celery (optional)
  • 1/4 cup dried cranberries (optional)
  • 1/2 cup cooked crumbled sausage (optional)
  • 2 teaspoons dried rosemary (optional)


Instructions

  1. Lightly grease the Crock Pot insert. Season chicken breasts with Italian seasoning, salt, and pepper, then place them on the bottom.
  2. In a bowl, mix together the cream of chicken soup, sour cream, stuffing mix, and half of the chicken broth.
  3. Spread the stuffing mixture over or beside the chicken. Add green beans and any optional ingredients you like.
  4. Cover and cook on HIGH for 4 hours or LOW for 6–7 hours.
  5. For additional moisture, stir in the remaining broth and heat for another 10 minutes.
  6. For firmer stuffing, leave the lid off during the last 30–40 minutes, or bake at 400°F for 10–15 minutes to brown the top.
  7. Serve hot, optionally with mashed potatoes and gravy.

Notes

  • Use foil to separate vegetables and stuffing if you prefer them not to mix.
  • Frozen green beans can be used but may become very soft—add halfway through for better texture.
  • For a tangy twist, substitute Greek yogurt for sour cream.
  • This recipe is freezer-friendly. Store portions for up to 3 months.
