- 4 boneless skinless chicken breasts
- 1.5 tablespoons Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 10.5 oz cream of chicken soup (low sodium)
- 1 cup (8 oz) sour cream
- 6 oz box stuffing mix
- 3/4 cup low sodium chicken broth (use more for extra moisture)
- 2 cups fresh green beans
- 1/2 cup diced onions (optional)
- 1/2 cup diced celery (optional)
- 1/4 cup dried cranberries (optional)
- 1/2 cup cooked crumbled sausage (optional)
- 2 teaspoons dried rosemary (optional)
Instructions
- Lightly grease the Crock Pot insert. Season chicken breasts with Italian seasoning, salt, and pepper, then place them on the bottom.
- In a bowl, mix together the cream of chicken soup, sour cream, stuffing mix, and half of the chicken broth.
- Spread the stuffing mixture over or beside the chicken. Add green beans and any optional ingredients you like.
- Cover and cook on HIGH for 4 hours or LOW for 6–7 hours.
- For additional moisture, stir in the remaining broth and heat for another 10 minutes.
- For firmer stuffing, leave the lid off during the last 30–40 minutes, or bake at 400°F for 10–15 minutes to brown the top.
- Serve hot, optionally with mashed potatoes and gravy.
Notes
- Use foil to separate vegetables and stuffing if you prefer them not to mix.
- Frozen green beans can be used but may become very soft—add halfway through for better texture.
- For a tangy twist, substitute Greek yogurt for sour cream.
- This recipe is freezer-friendly. Store portions for up to 3 months.
