Ingredients

  • 5 slices thick-cut bacon, chopped into ½-inch pieces
  • 1 (20 ounce) package hot Italian sausage, casings removed
  • 1 ½ cups chopped yellow onion
  • 1 tablespoon minced fresh garlic
  • 1 (32 ounce) container low-sodium chicken broth
  • 2 cups water
  • 4 medium russet potatoes, peeled and cut into 1-inch pieces
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper (adjust to taste)
  • 2 teaspoons granulated sugar
  • ¼ teaspoon ground nutmeg
  • 2 cups heavy cream
  • 3 cups tightly packed chopped kale, stems removed
  • Freshly grated Parmesan (optional topping)


Instructions

  1. Fry bacon and sausage in a large skillet over medium-high heat until the sausage is browned and no longer pink (about 7-8 minutes), breaking the sausage apart as it cooks. Add onion and garlic, cooking for another minute.
  2. Drain the grease and transfer the mixture to a 6-quart slow cooker.
  3. Add chicken broth, water, potatoes, salt, pepper, sugar, and nutmeg. Stir to combine.
  4. Cover and cook on high for 3-4 hours or low for 5-6 hours.
  5. Stir in heavy cream and kale. Cover and cook on high for an additional 30 minutes.
  6. Serve topped with freshly grated Parmesan if desired.

Notes

  • Cut the potatoes into even 1-inch pieces to ensure they cook uniformly.
  • Drain the fat from the sausage and bacon to prevent the soup from being greasy.
  • Don’t overcook the kale—add it in the last 30 minutes of cooking for the best texture.
  • If you prefer a thicker broth, mash some of the potatoes and return them to the soup.
