  • 1 packet ranch dressing mix
  • 4 cups beef broth

  • Shredded cheddar cheese, sour cream, and chopped green onions for garnish

Instructions

  1. Brown the Beef: Start by browning the ground beef in a skillet over medium-high heat. Be sure to cook it thoroughly until there’s no pink left. Afterward, drain any excess fat to keep the soup from becoming greasy.
  2. Sauté the Vegetables: Next, toss in the chopped onion and minced garlic into the skillet with the beef. Sauté the veggies for about 2-3 minutes until the onion turns translucent. This adds a great depth of flavor to your soup base.
  3. Transfer to the Crockpot: Once the beef and veggies are ready, transfer everything to your crockpot. The crockpot will do most of the heavy lifting from here on out!
  4. Add Remaining Ingredients: Now it’s time to toss in the rest of the ingredients: diced tomatoes, kidney beans, pinto beans, black beans, corn kernels, diced tomatoes with green chilies, diced green chilies, taco seasoning mix, and ranch dressing mix.
