Ingredients
Scale
- 2 (15.25 oz) cans whole kernel corn (or 3 cups frozen corn)
- 2 jalapenos, seeded and diced
- 1 cup shredded Colby Jack cheese (or Pepper Jack for extra heat)
- ⅔ cup sour cream
- 1 (8 oz) block cream cheese, cubed
- 6 slices bacon, cooked and chopped
- ¼ cup chopped cilantro
- ¼ cup queso fresco, crumbled
- 1 lime, half juiced, half cut into wedges
- 2 teaspoons Tajín seasoning (optional)
- Tortilla chips, Frito scoops, or crackers for serving
Instructions
- Combine the ingredients: In a slow cooker, add the drained corn, diced jalapenos, shredded Colby Jack cheese, sour cream, Tajín seasoning (if using), and cubed cream cheese.
- Set and cook: Cover and cook on low for 2 hours, stirring occasionally to ensure even melting. If the dip appears too thick, add a small amount of reserved corn liquid or milk to adjust the consistency.
- Incorporate the bacon: Stir in the cooked, chopped bacon, reserving a small portion for garnishing.
- Finish with fresh flavors: Before serving, sprinkle the dip with chopped cilantro, crumbled queso fresco, and a squeeze of fresh lime juice for a bright, fresh finish.
- Serve and enjoy: Keep the dip warm in the slow cooker on the “keep warm” setting and serve with tortilla chips, Frito scoops, or fresh vegetables.
Notes
- If you want a smoother texture, blend half of the corn before adding it to the slow cooker.
- To make it spicier, leave the jalapeno seeds in or add a pinch of cayenne pepper.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over low heat.
