With tender beef, caramelized onions, and melted cheese on a toasted hoagie roll, this dish delivers bold flavor with minimal effort. Perfect for busy nights, it’s a comforting, restaurant-quality meal you can make at home.
Ingredients
Scale
- 2 pounds ribeye or flank steak, thinly sliced
- 1 large onion, thinly sliced
- 2 bell peppers (green, red, or yellow), sliced
- 3 cloves garlic, minced
- 1 ½ cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 8 slices provolone cheese
- 4 hoagie rolls
- 1 tablespoon butter (for toasting rolls)
Instructions
- Prepare the Ingredients: Slice the beef as thinly as possible. If it’s difficult to cut, place it in the freezer for 30 minutes before slicing. Slice the onions and bell peppers into thin strips and mince the garlic.
- Assemble in the Slow Cooker: Place the beef in the slow cooker and add the sliced onions, bell peppers, and minced garlic. Pour in the beef broth and Worcestershire sauce. Sprinkle salt, pepper, and Italian seasoning over the mixture. Stir gently to distribute flavors evenly.
- Slow Cook the Beef: Cover the slow cooker and cook on low for 6–8 hours or high for 3–4 hours. The beef should become tender and infused with the flavors of the broth and seasonings.
- Melt the Cheese: About 10 minutes before serving, lay the slices of provolone cheese on top of the beef mixture. Cover the slow cooker again and let the cheese melt into the meat.
- Toast the Rolls: While the cheese is melting, slice the hoagie rolls and butter them lightly. Toast them in a skillet or under the broiler until golden and crisp.
- Assemble and Serve: Using a slotted spoon, scoop the beef mixture onto the toasted hoagie rolls, allowing excess liquid to drain. Serve immediately while hot and melty.
Notes
- If you prefer firmer bell peppers, add them during the last hour of cooking instead of at the beginning.
- For extra richness, mix a tablespoon of butter into the beef mixture before serving.
- Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
- Reheat by warming in a skillet over medium heat or in the microwave in short intervals.
