Description

These Crostini with Balsamic Strawberries and Ricotta are a quick and elegant appetizer, perfect for brunches, garden parties, and special occasions. The recipe combines sweet, tangy balsamic strawberries with creamy ricotta on crisp toasted baguette slices, creating a harmonious blend of flavors and textures in every bite.


Ingredients

  • 1/2 cup strawberries – finely chopped
  • 1/4 cup balsamic vinegar
  • 1 tsp lemon zest
  • 2 tsp brown sugar
  • 5 tbsp ricotta cheese
  • 1/2 baguette – sliced into 12 half-inch pieces


Instructions

  1. Preheat oven to 350°F (175°C). Slice the baguette into 12 half-inch slices and place them on a baking sheet.
  2. Toast the baguette slices in the oven for about 5 minutes, or until golden and crisp.
  3. While the bread is toasting, finely chop the strawberries until you have 1/2 cup. If very ripe, let them sit briefly on a paper towel to remove excess juice.
  4. In a small saucepan, combine 1/4 cup balsamic vinegar and 2 tsp brown sugar. Heat over medium, stirring occasionally, for 6–8 minutes until thickened into a reduction.
  5. Prepare 1 tsp of lemon zest while the sauce is reducing.
  6. In a bowl, mix the chopped strawberries and lemon zest. Pour the balsamic reduction over and stir gently.
  7. Spread about 1/2 tbsp of ricotta on each toasted baguette slice.
  8. Top each crostini with a spoonful of the balsamic strawberry mixture. Serve immediately.

Notes

  • Use only fresh strawberries for best texture and flavor.
  • Assemble crostini no more than 20 minutes before serving to prevent sogginess.
  • You can prepare the strawberry mixture and balsamic reduction ahead of time, but keep them separate until assembly.
  • Mascarpone cheese can be used instead of ricotta for a dessert-like version.
