Description

Dump and Go Crockpot Marry Me Chicken is a creamy, flavorful slow cooker meal made with tender chicken breasts, garlic-Parmesan sauce, and sun-dried tomatoes. It’s perfect for busy weeknights or romantic dinners and delivers big taste with minimal effort.

Ingredients

Scale
  • 4 boneless skinless chicken breasts: main protein, becomes tender in the crockpot
  • Salt and pepper, to taste: basic seasoning for the chicken
  • 1 cup chicken broth: forms the base of the sauce and keeps chicken moist
  • 1 cup heavy cream: adds rich, creamy texture to the sauce
  • 1/2 cup grated Parmesan cheese: gives nutty, umami flavor
  • 3 cloves garlic, minced: adds deep, aromatic flavor
  • 1 tsp dried oregano: provides herby, Italian flavor
  • 1/2 tsp dried thyme: adds earthiness and warmth
  • 1/4 tsp red pepper flakes (optional): for a mild kick
  • 1/2 cup chopped sun-dried tomatoes (in oil, drained): adds tangy sweetness and texture
  • 2 tbsp butter: enriches the sauce and gives a silky finish
  • Fresh basil or parsley, for garnish: adds freshness and color

Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. In a medium bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes.
  3. Place the seasoned chicken breasts in the bottom of the crockpot.
  4. Pour the creamy sauce mixture over the chicken.
  5. Sprinkle the sun-dried tomatoes evenly over the top.
  6. Cover and cook on LOW for 4 hours or HIGH for 2 hours, until the chicken is fully cooked and tender.
  7. Add the butter during the last 30 minutes of cooking and stir gently to incorporate.
  8. Garnish with fresh basil or parsley before serving. Serve over rice, pasta, or with bread.

Notes

  • You can use chicken thighs instead of breasts for a juicier option.
  • Pre-minced garlic can save time without sacrificing flavor.
  • Leftovers keep well in the fridge for up to 3 days and freeze for up to 2 months.
  • Add spinach during the last 15 minutes of cooking for a veggie boost.
