- 8 lbs boneless prime rib, room temperature
- 1 cup butter, room temperature
- 1/4 cup coarse sea salt
- 1/4 cup ground black pepper
Instructions
- Preheat the oven to 500°F (260°C).
- Use a hand mixer to cream the room-temperature butter and spread it evenly on the prime rib.
- Season the prime rib generously with coarse sea salt and ground black pepper.
- Place the seasoned prime rib in the Dutch oven, fat side up, and cook uncovered in the oven for 15 minutes to brown.
- Lower the oven temperature to 325°F (163°C) and cook the prime rib according to your desired doneness. For medium-rare, cook for 10-12 minutes per pound.
- Turn off the oven, but leave the prime rib inside for 1-2 hours before opening the oven door to let it rest.
- Remove the prime rib from the Dutch oven, cut the twine, slice the roast, and serve. Garnish with a sprig of thyme or garlic if desired.
Notes
- Ensure the prime rib is at room temperature for 3-6 hours before cooking for even cooking.
- Season the roast generously, as some of the seasoning will end up in the drippings.
- Aim for an internal temperature of 125°F to 130°F (51-54°C) for medium-rare doneness after resting.
- If you don’t have a Dutch oven, you can use a roasting pan or an oven-safe skillet.
