Description

Easter Bunny Coconut Tails are cute no-bake coconut treats with a soft, creamy center and a fluffy shredded coconut coating. They are easy to make, perfect for Easter dessert tables, and ideal for preparing ahead for parties, gifting, or family celebrations.

Ingredients

Scale
  • 1 can sweetened condensed milk (14 ounces): adds sweetness and creates the creamy base.
  • 4 cups sweetened shredded coconut, divided: gives the treats their signature texture and fluffy coating.
  • 2 cups powdered sugar: thickens the mixture and helps it hold its shape.
  • 1/4 cup unsalted butter, softened: adds richness and a smooth texture.
  • 1 teaspoon vanilla extract: enhances the overall flavor.
  • 8 ounces white chocolate, melted (optional): adds extra sweetness and helps create a firmer finish.

Instructions

  1. In a large mixing bowl, beat together the sweetened condensed milk, softened butter, and vanilla extract until smooth and fully combined.
  2. Add the powdered sugar gradually, mixing well after each addition, until the mixture thickens.
  3. Stir in 2 1/2 cups of the shredded coconut and mix until evenly distributed.
  4. Cover the bowl and refrigerate the mixture for 1 hour, or until firm enough to scoop and roll.
  5. Scoop out small portions of the chilled mixture and roll them into 1-inch balls using your hands.
  6. Place the remaining 1 1/2 cups shredded coconut in a shallow bowl and roll each ball in the coconut until fully coated.
  7. If using white chocolate, melt it gently and dip the bottom or drizzle a little over each coconut ball, then place on a parchment-lined tray.
  8. Chill the Easter Bunny Coconut Tails for 20 to 30 minutes, or until set, then serve or store in an airtight container.

Notes

  • Chill the mixture before shaping so the coconut balls are easier to roll.
  • If the mixture feels too soft, add 2 to 4 extra tablespoons of powdered sugar or shredded coconut.
  • Use damp hands when rolling to prevent sticking.
  • Store the treats in the refrigerator for up to 1 week.
  • Freeze in an airtight container for up to 2 months and thaw in the refrigerator before serving.
  • For a less sweet version, use unsweetened coconut.
