Description

Easter Egg Fruit Pizza is a colorful spring dessert made with a soft sugar cookie crust, creamy strawberry cream cheese frosting, and a vibrant topping of fresh berries arranged in a festive egg shape. Perfect for Easter brunch or holiday gatherings, this easy dessert combines sweet cookie flavors with fresh fruit for a light and crowd-pleasing treat.

Ingredients

Scale
  • 1 package (18 oz / about 510 g) sugar cookie mix
  • 1/2 cup (113 g) unsalted butter, melted and cooled
  • 1 large egg
  • 4 oz (113 g) cream cheese, softened
  • 1/2 cup (75 g) fresh strawberries, chopped
  • 1 tablespoon (8 g) powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1 cup (150 g) fresh strawberries, sliced
  • 3/4 cup (110 g) fresh blueberries
  • 3/4 cup (95 g) fresh raspberries
  • 1/2 cup (70 g) fresh blackberries

Instructions

  1. Preheat the oven to 375°F (190°C) and generously grease a 13-inch pizza pan or baking sheet to prevent sticking.
  2. In a medium bowl, combine the sugar cookie mix, melted butter, and egg. Stir until a soft dough forms.
  3. Press the dough evenly onto the greased pizza pan to form a large round cookie base.
  4. Bake for 10–15 minutes or until the edges are lightly golden brown and the center is set.
  5. Remove from the oven and allow the cookie to cool completely for about 45 minutes.
  6. Once cooled, carefully trim the cookie into an egg shape using a knife if desired.
  7. In a food processor or blender, combine the softened cream cheese, chopped strawberries, powdered sugar, and vanilla extract. Blend until smooth and creamy.
  8. Spread the strawberry cream cheese frosting evenly over the cooled cookie base.
  9. Arrange the sliced strawberries, blueberries, raspberries, and blackberries over the frosting to create decorative patterns like an Easter egg.
  10. Slice with a pizza cutter and serve immediately.

Notes

  • Always grease the baking pan well to prevent the cookie crust from sticking.
  • Allow the cookie base to cool completely before spreading the frosting to avoid melting.
  • Fresh fruit works best because frozen fruit can release excess moisture.
  • The cookie base can be baked up to 3 days ahead and stored tightly wrapped at room temperature.
  • Assemble the fruit pizza the same day you plan to serve it for the best texture.
  • Leftovers can be stored covered in the refrigerator for up to 2 days.
