Description

These juicy cheeseburger sliders are a quick and satisfying mini burger recipe baked on a sheet pan for easy prep and cleanup—perfect for weeknight dinners or casual parties.


Ingredients

  • 2 lb lean ground beef (90/10 or 93/7)
  • ½ tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ large yellow onion, finely diced
  • ¼ cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar cheese, shredded (or use extra sliced cheese)
  • 24 dinner rolls (2 packs of 12)
  • 2 tablespoons unsalted butter, melted (plus more for greasing)
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the Oven and Prep the Pan: Preheat your oven to 350°F and grease the bottom of a rimmed baking sheet with a bit of melted butter to prevent sticking.
  2. Cook the Beef Mixture: In a large skillet over medium-high heat, add olive oil and sauté the diced onion until soft. Add the ground beef and season it with salt, pepper, and garlic powder. Break up the meat and cook until browned and fully cooked through. Tilt the pan and spoon out any excess grease.
  3. Add Creaminess: Remove the pan from the heat and stir in the mayonnaise while the beef is still warm. This keeps the filling moist and creamy.
  4. Assemble the Sliders: Slice the entire set of dinner rolls in half horizontally, keeping them connected. Place the bottom half on the prepared sheet pan. Layer the sliced cheddar cheese across the bottom, then evenly spread the beef mixture over the cheese. Press gently with a spatula to make the surface even. Top with shredded cheddar.
  5. Finish the Layering: Place the top half of the rolls on the beef and cheese layer, aligning them carefully. Brush the tops with melted butter and sprinkle sesame seeds evenly over the surface.
  6. Bake to Golden Perfection: Place the sheet in the oven and bake uncovered for 12–15 minutes, or until the cheese is melted and the tops are golden brown. Let rest for a couple of minutes before slicing into individual sliders.

Notes

  • You can halve this recipe easily for smaller households without changing the baking time. To prevent sogginess, always drain the beef well before adding it to the rolls. For extra flavor, stir in ketchup or mustard with the mayo or serve with dipping sauces on the side. Add pickles, jalapeños, or caramelized onions for a twist.
