  • 4 Tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup mild or sharp cheddar cheese, shredded
  • 3/4 cup sour cream
  • Green onions, to serve (optional)


Instructions

  1. To a crockpot, add potatoes, chicken broth, cooked bacon, onion, garlic, salt, and pepper. Stir to combine.
  2. Cover and cook on high for 3-4 hours or on low for 5-6 hours, until potatoes are fork-tender.
  3. Once potatoes are cooked, lightly mash them to your desired consistency. For a smoother texture, use an immersion blender.
  4. Stir in butter, flour, milk, shredded cheddar cheese, and sour cream. Mix until combined and cook on low for an additional 30 minutes to an hour until the soup is creamy and thick.
  5. Top with green onions and any other desired toppings. Serve and enjoy!
